Dried Cherry and Chicken Mint Salad
Ingredients:
- 5 cups Chicken, cooked and cubed
- 1 cup Celery, sliced
- 1 cup Spring Onions, chopped
- 1/2 lb. L'Esprit dried Cherries
- 1/2 cup fresh Mint, leaves only, chopped
- 2 heads curly leaf Lettuce, washed and drained
- 1/2 cup sliced Almonds
- 1 cup Walnut or Sunflower Oil
- 1/2 cup Raspberry Vinegar
- 2 tbs. Dijon Mustard
- Salt and freshly ground Pepper to taste
- Toss chicken cubes, celery, onions, dried cherries and mint leaves together.
- Pour raspberry vinaigrette over salad.
- Serve on top of leaf letture and garnish with almonds.
