Panzanella Bread Salad

- 2 cups bread cubes cut from day-old Italian, French, or sourdough bread
- 2 tablespoons minced fresh basil
- 1/4 cup finely diced red onion
- 1/4 cup finely minced Italian flat-leaf parsley
- 1 tablespoon L'ESPRIT Minced Tomatoes
- 3 tablespoons fresh squeezed lemon juice
- 1 tablespoon Balsamic vinegar
- Salt and freshly ground black pepper
- 2 cups mixed salad greens or chopped romaine lettuce
In a large bowl, combine all ingredients and toss well. Let stand 10-15 minutes to blend the flavors. Toss again and serve on a bed of salad greens.
OPTIONAL: can add olives, cucumbers, hearts of palm, artichoke hearts
