Panzanella Bread Salad

(Serves 4)
  1. 2 cups bread cubes cut from day-old Italian, French, or sourdough bread
  2. 2 tablespoons minced fresh basil
  3. 1/4 cup finely diced red onion
  4. 1/4 cup finely minced Italian flat-leaf parsley
  5. 1 tablespoon L'ESPRIT Minced Tomatoes
  6. 3 tablespoons fresh squeezed lemon juice
  7. 1 tablespoon Balsamic vinegar
  8. Salt and freshly ground black pepper
  9. 2 cups mixed salad greens or chopped romaine lettuce

In a large bowl, combine all ingredients and toss well. Let stand 10-15 minutes to blend the flavors. Toss again and serve on a bed of salad greens.

OPTIONAL: can add olives, cucumbers, hearts of palm, artichoke hearts
